Mini Chickpea Burgers

Hi guys! After a very long while I am here again with another recipe :-D. This mini chickpea cakes are absolutely delicious, you are goint to love them I promise. They are very easy to do and the most important thing, they are vegan and gluten free ;-).

Ingredients:

11/2 cup cooked chickpeas

2 medium grated carrots

1/2 oats

1 small onion finele diced

1 small sweet pepper finely diced

2 grated garlic cloves

1 red chillie fineley diced

Scallion (as much as you want)

Black pepper (as much as you want)

Paprika ( as much as  you want)

Coriander seeds (as much as you want)

Directions:

1- In a pan with an oil of your preference, stir fry all of the ingredients except for the chickpeas, the oats and the scallion  for 6 minutes.

2-In a food processor blend the chickpeas (I did not let them to get very smooth)

3 Add the chickpeas and the remaining ingredients to a bowl and mix

4- Form the mixture into paties (I made 9).

5- You can freeze them for a while and then fry or bake them. I fried them straigth away, if you are doing this make sure you use a bit of rice flour otherwise the paties could break up.

I fried them beacuse of time, but if you bake them it will be healthier :-). I hope ypu enjoy cooking these mini burgers as much as I do!
