I want to share with you a really delicious vegan asian dish that I learned few days ago. It´s very easy and very quickly to prepare, and because of that it´s a great option if you don´t have time to spend in the kitchen.
Each ingredient of the recipe has no measure, so you can use as much as you want of each 🙂
INGREDIENTS
-Green beans
-Onions
-Sweet pepper
-Greated garlic
-Hot pepper ( I used 1)
-Sundried Tomatos
-Carrots
-Broccoli
-Mushrooms (any kind)
-Thai Curry (make sure it is vegan)
-Lime leaves ( I used 4)
-Lemon grass
-Coconut milk ( I used a can of coconut in milk made in Thailand, but you can use wherever you want, and if it´s organic is even more better)
PREPARATION
First of all, chop the vegetables as you like. In a wok stir-fry the onions, garlic, hot pepper and sweet pepper with vegetable oil for a minute or two. add the rest of the vegetables except mushrooms and and sitr for about 4-5 minutes, after that you can add the mushrooms and then keep stir frying for one minute.
Add the coconut milk and stir for 5 minutes, add the curry, lime leaves and the lemon grass. As I said, use as much as you want, add little by little till you get the taste that you want. Stir for about 2-3 minutes more and now it´s ready you can enjoy your meal :-). It´s great to eat it with rice and salad. Hope you like it 😀
