Coconut sugar is produced mainly in South Asian countries, particulaly in Indonesia and The Philipines. It undergoes minimum processing in comparisson with other unrefined sugars; this process consist of :
- Collecting the liquid sap from the coconut flower and then
- Placed the sap on containers under heat until most of the water has been evaporated

In recent years this delicious sugar has been gaining popularity since our eyes are being constantly opened to the dangers of refined sugars. Also, when we hear the words “organic coconut sugar” we automaticly think that it is healthier. Nevertheless, it is fair to ask if it there is any nutritional difference between coconut sugar and white sugar.

The Truth
1- Coconut sugar has more nutritional value than white sugar due to the nature of its simpler production process. Therefore it retains some of the natural vitamins, minerals, fibre and antioxidants. rather than basic “empty calories”.
2- It contains traces of vitamin C which boosts your immune system
3- It also contains potassium which helps to regulates blood pressure lowering your risk of heart attack and strokes.
4- It improves the digestion process due to the amout of fiber it contains and it can also help to increase your energy levels and reduce your stress and anxiety levels as well since it aids your hormonal levels.

The Lie
1-Coconut sugar does not have lower levels of fructose in comparisson to white sugar. White sugar is made of 50% fructose and 50% glucose whilst coconut sugar is made of 70 % to 80% sucrose which is half fructose. Therefore, coconut sugar contains similar amount of fructose as white sugar.
2- Although coconut sugar is still a better option than table sugar it is not a miracolous one and should be consumed with moderation. We do not have a good amount of good quality of studies recommending this sugar over the others.
3- According to the dietician Victoria Taylor, “coconut sugar has the same number of calories as other sugars, refined or not”. Again, treat it as if it is white sugar and keep its consumption to the minimum.
As a personal choice I have decided to switch to organic coconut sugar a long time ago. First of all I absolutely love coconut! and I like the fact that I am not consuming empty calories so that my body can work with it. I consume very small amounts because we shouldn’t abuse of it either, overall it is still a better option than regular white sugar.
